Don’t Show Up Empty Handed This Thanksgiving!

Turkey day is almost here! HALLELUJAH! I can’t wait to put my stretchy pants and my favorite campus t-shirt on and dive into all the yummy holiday food & treats… I can’t be the only one, right?! So, if anyone is like me… your whole life has been full of hanging out with your family on the couch or outside on Thanksgiving while your mom, grandma and aunts are in the kitchen doing all the cooking. Except for my past few years because I’ve been with my boyfriend’s family! Which, still much hasn’t changed because his parents have made all of the wonderful holiday meals. But has anyone else had the thought that we are adults now and maybe should start contributing to the feast? Even more so than just doing a few things here and there in the kitchen… I’m talking like putting your little heart and hard work into a yummy side dish or dessert to bring to the table!

Well, I have! A.) Because it’s never good to show up empty handed to someone’s home and B.) because I can start a traditional dish for myself that everyone can count on me to bring every year (if it’s a hit!) I actually have a Friendsgiving this weekend and I am making my momma’s famous holiday dish that has been a hit for years ~ Corn Casserole. It is SO yummy. So, I wanted to share this quick and easy recipe with you guys and if it sounds good to you then you can give it a shot and take it to your significant other’s family’s home or your relatives… or your friend’s! Wherever you spend your holiday!

Jalapeno Corn Casserole

Ingredients

  • 3-5 cans of corn
  • 1-2 packages of cream cheese *for 3 cans of corn = 1 package of cream cheese*
  • 2 jalapenos
  • 1 stick of butter

Directions

  1. Saute jalapenos in melted butter
  2. Soften cream cheese by placing in the microwave *soften not melted*
  3. Add the softened cream cheese to the cans of corn in your baking dish. Stir and spread evenly across the dish
  4. Add butter jalapeno mix to the top and stir. Spread evenly again
  5. Cook at 350 until the casserole is bubbly
  6. Let cool and ENJOY!

Your contribution doesn’t have to be anything extravagant or something that you slaved over for hours in the kitchen! But it’s a thoughtful gesture to show up with something warm. I’m really hoping my friends love this dish as much as all of our friends and family have over the past 20 years! Maybe yours will too!
